Ingredients:
- 1 cup of coconut flour
- 2 tablespoons of baking powder
- 1/4 teaspoon of salt
- 1 cup of almond milk
- 1/4 cup of maple syrup
- 1/4 cup of melted coconut oil
- 1 teaspoon of vanilla extract
- 1/2 cup of blueberries (optional)
Kitchen Tools Needed:
- Mixing bowl
- Frying pan
- Whisk
- Measuring cups
- Spatula
Instructions:
- To the bowl add the coconut flour, baking powder, and salt and mix until well combined.
- Combine the almond milk, maple syrup, melted coconut oil, and vanilla extract in a different bowl mixing the ingredients until they are well incorporated.
- Mix the wet ingredients into the dry ingredients until it’s barely mixed. If you wish to, fold in the blueberries.
- Place a frying pan in the oven and heat it to medium then grease it with oil from a coconut.
- Spoon ¼ cup of batter onto the frying pan for each pancake and fry until bubbles come on the surface, 3-4 minutes.
- Turn the pancakes over and cook for an additional 2-3 minutes or until the color is golden brown.
- Continue with the remaining batter and be sure to grease the pan if it is needed.
