Roti Sri Lankan Delight

Ingredients:

  • 700g of Godamba Roti (Sri Lankan flatbread)
  • 500g of cooked chicken, diced
  • 200g of mixed vegetables (carrots, bell peppers, and peas)
  • 3 large eggs
  • 150g of onion, finely chopped
  • 100g of green chilies, sliced
  • 2 teaspoons of curry powder
  • 1 teaspoon of garam masala
  • 4 tablespoons of oil
  • Salt to taste
  • Coriander leaves for garnish

Kitchen Tools Needed:

  • Large skillet
  • Chopping board
  • Chef’s knife
  • Spatula
  • Serving plates

Instructions:

  • Melt the butter in a large pan over an average flame.
  • Fry the finely chopped onions and green chilies until they tender or the onions become translucent.
  • Add the curry powder and garam masala and fry for an additional one minute.
  • Place the diced chicken and mixed vegetables at the skillet, and stir it in order to ensure correct mixing.
  • Make a well in the middle of the skillet and beat in the eggs then stir until cooked to be blended with other dishes.
  • When everything is fine incorporated, add the Godamba Roti, torn into small pieces as the mixture is prepared.
  • Accompany the preparation of the dish with salt to your preference and cook the mixture further while stirring all content till it has been warmed up.
  • Should be served hot and if desired garnished with fresh coriander leaves.
