Ingredients:
- 1.5kg of ripe tomatoes
- 500g of cherry tomatoes
- 300g of red onion, thinly sliced
- 150g of fresh basil leaves, torn
- 200g of feta cheese, crumbled
- 100ml of extra virgin olive oil
- 50ml of balsamic vinegar
- Salt and pepper to taste

- Chef’s knife
- Cutting board
- Large mixing bowl
- Whisk
- Serving platter
Instructions:
- First, rinse the ripe tomatoes and cherry tomatoes under a tap of running water. Take off the stem from the cherry tomatoes.
- Slice the ripe tomatoes into wedges and cherry tomatoes in half. Place them into a large capacity mixing bowl.
- Chop the red onion thinly and put it into the bowl with tomatoes.
- Chop the fresh basil and then fold it into the tomatoes and onions very carefully.
- In a small bowl prepare the dressing using the extra virgin olive oil, balsamic vinegar, salt and pepper.
- Pour the dressing over the tomato mixture and mix gently to allow all the ingredients get well mixed up.
- Pour the salad into a serving dish and sprinkle the crumbled feta cheese on top of it.
- Allow the salad to stand for about 10 minutes to allow the flavors to mix before serving.
