Ingredients:
- 200g of fresh Gotu Kola leaves
- 150g of quinoa
- 2 ripe avocados, diced
- 1 medium cucumber, diced
- 200g of cherry tomatoes, halved
- 1 small red onion, finely chopped
- 50g of pumpkin seeds
- 50ml of olive oil
- 50ml of lemon juice
- Salt to taste
- Pepper to taste
- Fresh herbs (cilantro or parsley) for garnish

- Knife

- Mixing bowl

Instructions:
- Wash the quinoa under cold water and prepare it as per the instructions on the pack. After cooking allow it to cool.
- To the cooked quinoa add the Gotu Kola leaves, diced avocados, cucumber, cherry tomatoes and red onion.
- In a small bowl, mix the olive oil, lemon juice, salt and pepper to make the dressing.
- Drain the dressing over the salad and mix lightly so that all the ingredients are coated with the dressing.
- Allow the salad to stand for approximately 10 minutes to enhance the taste of the ingredients.
- Present on individual plates, garnished with fresh herbs and topped with pumpkin seeds.
