Exquisite Gotu Kola Salad with Quinoa and Avocado

Ingredients:

  • 200g of fresh Gotu Kola leaves
  • 150g of quinoa
  • 2 ripe avocados, diced
  • 1 medium cucumber, diced
  • 200g of cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 50g of pumpkin seeds
  • 50ml of olive oil
  • 50ml of lemon juice
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (cilantro or parsley) for garnish

Kitchen Tools Needed:

  • Knife
  • Chopping board
  • Mixing bowl
  • Whisk
  • Serving plates

Instructions:

  • Wash the quinoa under cold water and prepare it as per the instructions on the pack. After cooking allow it to cool.

     

  • To the cooked quinoa add the Gotu Kola leaves, diced avocados, cucumber, cherry tomatoes and red onion.

     

  • In a small bowl, mix the olive oil, lemon juice, salt and pepper to make the dressing.

     

  • Drain the dressing over the salad and mix lightly so that all the ingredients are coated with the dressing.

     

  • Allow the salad to stand for approximately 10 minutes to enhance the taste of the ingredients.

     

  • Present on individual plates, garnished with fresh herbs and topped with pumpkin seeds.
