Vegan Coconut Pancakes

Ingredients:

  • 1 cup of coconut flour
  • 2 tablespoons of baking powder
  • 1/4 teaspoon of salt
  • 1 cup of almond milk
  • 1/4 cup of maple syrup
  • 1/4 cup of melted coconut oil
  • 1 teaspoon of vanilla extract
  • 1/2 cup of blueberries (optional)

Kitchen Tools Needed:

  • Mixing bowl
  • Frying pan
  • Whisk
  • Measuring cups
  • Spatula

Instructions:

  • To the bowl add the coconut flour, baking powder, and salt and mix until well combined.
  • Combine the almond milk, maple syrup, melted coconut oil, and vanilla extract in a different bowl mixing the ingredients until they are well incorporated.
  • Mix the wet ingredients into the dry ingredients until it’s barely mixed. If you wish to, fold in the blueberries.
  • Place a frying pan in the oven and heat it to medium then grease it with oil from a coconut.
  • Spoon ¼ cup of batter onto the frying pan for each pancake and fry until bubbles come on the surface, 3-4 minutes.
  • Turn the pancakes over and cook for an additional 2-3 minutes or until the color is golden brown.
  • Continue with the remaining batter and be sure to grease the pan if it is needed.
