Step-by-Step Guide to Making Koththu Roti

Step 1: Preparing the Ingredients

  1. Shred the Roti: Cut Godhamba roti into small pieces like pieces of straws.
  2. Marinate the Meat: Combine the meat with salt, pepper, turmeric, curry powder. Let this mixture to stand for 15-20 minutes for its flavors to be absorbed well.

Step 2: Cooking the Meat and Vegetables

  1. Cook the Meat: Heat oil in a large pan for approximately 2 minutes on an over medium flame. Put the marinated meat and stir until tender.
  2. Sauté the Vegetables: Stir in onions, garlic, ginger and green chilly. Cook until the onions become tender and clear (until there is no white in them).
  3. Add Vegetables: Now add the carrots, cabbage and the leeks. Sauté until vegetables have slightly ‘seared’.

  1. Add the Roti: After cooked the vegetables, add the shredded roti strips.
