Ingredients:
- 300g quinoa
- 4 medium apples, diced
- 200g spinach leaves
- 100g walnuts, chopped
- 50g feta cheese, crumbled
- 80ml olive oil
- 60ml apple cider vinegar
- 2 tablespoons honey
- Salt to taste
- Pepper to taste

Instructions:
- Wash quinoa under cool water and prepare it by boiling and then simmering as per the instruction on the pack, then cool.
- In a large bowl, mix the apples, spinach, walnuts, and feta cheese that has been cut into small pieces.
- In a small bowl prepare the dressing by adding the olive oil, apple cider vinegar, honey, salt and pepper in the bowl and whisking them till they combine well.
- After the quinoa has cooled add it to the other ingredients in the mixing bowl.
- Once prepared, pour the dressing over the salad and mix all the ingredients to ensure that they blend well together.
- It’s best served immediately, but if necessary, you can chill the dish for 10 minutes in the refrigerator before serving.
