Spicy Mango Quinoa Salad

Ingredients:

  • 100g of quinoa
  • 1 ripe mango, diced
  • 100g of cherry tomatoes, halved
  • 1 avocado, diced
  • 50g of red bell pepper, diced
  • 15g of fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tbsp of olive oil
  • 1 tsp of chili powder
  • Salt to taste

Kitchen Tools Needed:

  • mixing bowl
  • knife
  • cutting board
  • pot

Instructions:

  • Wash quinoa under cold water and follow the cooking directions on the box and cook quinoa until it is soft. Let it cool.
  • Take a bowl and blend mango, cherry tomatoes, avocado, red bell pepper and fresh cilantro in it.
  • After that, the quinoa should cool, then add it to the rest of the ingredients in the food processor.
  • In another bowl, mix lime juice, olive oil, chili powder and salt. After that, the dressing should be poured over the salad mixture and the salad should be lightly tossed.
  • This salad can be enjoyed best cold or at more or less room temperature.
