Creamy Avocado Quinoa Salad

Ingredients:

  • 50g of cooked quinoa
  • 1 small avocado
  • 10g of feta cheese
  • 10g of olive oil
  • 5g of lemon juice
  • salt and pepper to taste
  • 20g of cherry tomatoes

Instructions:

  • Take a bowl and mix the avocado with the fork until they become a creamy paste.
  • Finally put the cooked quinoa into the mashed avocado and stir until it blends well.
  • Mix the feta cheese and add it into the mixture as well.
  • Finally pour the olive oil and lemon juice over the salad and mix gently.

  • Cherry tomatoes should also be included in the salad but they should be halved first.
